The Saturday lunch saga continues... how I can be faced with a fridge full of food and still be stumped for ideas I don't know. In any case, savoury toast and salad came to mind. Now I know what you're thinking - toast and salad aren't usually a natural pairing, but in this case, I thought it worked really well.
Super quick and easy, I smothered some sourdough toast with full-fat cream cheese, topped it with a sliced salad tomato, and served it with sweet plum tomato, rocket, and mixed olive salad, which I simply dressed in a balsamic and olive oil vinaigrette. Freshly cracked black pepper and a light sprinkling of salt was all this dish needed to finish it off by drawing out the tomatoes natural juice.
What's even better is this is the sort of lunch I can easily assemble at work in literally no time at all.
