Avocado On Toast: Two Ways

I am fully aware that avocado on toast is a very standard and quite basic breakfast/brunch/lunch dish. However, when you want to treat yourself to something a bit special, that is both filling and delicious, avocado on toast is always my "go-to" and I like to have it one of two (or both) ways: with a fried or poached egg, or halved cherry tomatoes and balsamic glaze.

Ingredients

2 slices of bread, toasted

1 Avocado, mashed

1 egg

5 cherry tomatoes, halved

Balsamic glaze

Salt and pepper


Recipe

  1. Whilst your bread is toasting (I do mine in the oven so it is less likely to burn), halve and de-stone your avocado, scoop out its green interior and mash with a fork.

  2. Next, fry or poach your egg, and as this is cooking, halve your cherry tomatoes.

  3. Retrieve your slices of toast, spread evenly with the avocado and arrange your tomatoes cut side up. Sprinkle with salt and pepper to draw out the tomato juice. Drizzle the tomatoes with balsamic glaze.

  4. When the egg is done, simply place on your other avocado-topped toast and season with salt and pepper to taste.
