Courgette Tart

Easy, quick, and light, this courgette tart needs only 4 ingredients, is perfect for picnics, work lunches, or summer evening meals. Simply serve with a rocket salad and vegetables.

Ingredients

2 small courgette

180g garlic and herb cream cheese

375g ready rolled puff pastry

A few basil leaves (optional)


Recipe

  1. Preheat the oven to 220°C / Fan 200°C / Gas 7. Line two baking trays with baking paper.

  2. Wash, and thinly slice the courgette into long flat strips.

  3. Unroll the puff pastry, and cut into four rectangles. Place the pastry rectangles on the two baking trays. Lightly score around the edges of each pastry tart. This causes the outer edges to rise and form a "pastry wall" to encase the filling.

  4. Heat a frying pan or griddle and lightly fry the courgette slices with a little added salt for around 5 minutes. This will help to remove the bulk of the moisture from the courgette and will prevent any soggy bottoms.!

  5. Spread the cream cheese evenly over each pastry tart, keeping inside the scoring.

  6. Place the courgette slices on top of the cheese fillings.

  7. Bake the tarts in the oven for 12 minutes on the middle shelf, and remove when golden brown.

  8. Serve with torn basil on top, and a salad of your choice.
